Cheese and caramelised onion tart

I bought one of those value bags of onions the other week.

And I still seemed to have a huge bagful of onions in the kitchen this morning. What to do? Well the first obvious recipe was french onion soup. I have several recipes for french onion soup, but for some reason went for a new recipe: Nigel Slater’s Onion Soup with Madeira and Gruyere Toasts.  The picture of it looks oozingly and unctiously dark and delicious.  But mine wasn’t. He uses chicken stock instead of the traditional beef. I have no problem with this – I’ve often made onion soup with chicken stock. But I’ve no idea how he managed to get his soup so dark in colour, without a beef stock, as mine is light in colour, as you’d expect.

But, we didn’t have onion soup for lunch. And the dough for the baps remained in the bread machine till later in the afternoon.

And I got started on a better lunch solution: Cheese and Onion Tart.  This was clearly a far more sensible lunch, as it made use of not only a whole load of onions, but also some leftover cream, leftover pastry and a lump of cheese from the fridge. I love a fridge-sweep to make something new, delicious and unexpected. Why hadn’t I thought of this sooner?

Cheese and caramelised onion tart

  • Shortcrust pastry made with 4oz flour
  • a big glug of olive oil
  • a big slice of butter, about 25g
  • 4 large onions, cut in half from end to end, and then thinly sliced into half moons
  • 2 soupspoonfuls of muscovado sugar
  • 1 egg, plus 2 extra yolks
  • about 200ml cream
  • about 50ml whole milk
  • 2 soupspoonfuls of cream cheese
  • 50g mature cheddar cheese
  • 2 tsp dijon mustard
  • a few sprigs of fresh thyme

Preheat your oven to 200C or GM7. Butter a sponge sandwich tin (well, that’s what I used, a 23cm round tin with a loose bottom).

  1. Roll out the pastry and line the tin with it. Place the tin on top of a baking sheet – it’ll make everything so much easier later on. Put back in the fridge for 20 minutes.
  2. Prick the base with a fork, then cover the pastry with some baking paper and baking beans. Put in the hot oven for 12 minutes.
  3. Remove the baking beans, turn the oven down to 180C / GM4 and return the pastry to the oven for 5 minutes.
  4. While the pastry is in the oven (for the first time) put the oil, butter and onions in a heavy bottomed frying pan and heat on an oh so gentle heat for 25 minutes with the lid on. You might want to stir them from time to time, but not too often, as you need to keep the lid on to retain their liquid. After 25 minutes they should still be pale in colour, but have a certain sticky gloopiness about them.
  5. Now remove the lid from the onions, stir in the sugar, and cook the onions for a further 10 – 15 mins, till nicely caramelised, and the liquid has all but evaporated.
  6. Whisk the egg and the yolks together in a big bowl. Add the cream cheese, the cream and the milk and mix. Add the grated cheddar, and season with lots of freshly ground black pepper.
  7. Spread the base of the pastry case with the dijon mustard.
  8. Pick the thyme leaves off the stems and fold them through the onions, then spread on top of the mustard
  9. Pour the cheesy, eggy, creamy mix over the top of the onions and carefully slide the whole thing into the oven.
  10. Bake for about 35 minutes – the tart should still have a wee bit of a wibble wobble about it.

Serve with boiled new potatoes and a salad. It’s best at room temperature, or a wee bit warmer.

Beetroot cheesy muffins

I owe some colleagues some home baking. I’d promised one muffins and another doesn’t eat sugar, so it was clearly time to make another batch of  savoury muffins.  It would have been the Parmesan and Courgette Muffins again, if Tesco’s had any courgettes. But at 7pm I wasn’t about to go traipsing round town hunting down a courgette, so beetroots became a worthy substitute.

Now, if only I’d consulted with the facebook fairies before  I went shopping – the recipe could have been enhanced with feta cheese, goats’ milk, smoked salmon and creme fraiche. But there’s always next time.

Pink savoury mufflets

Savoury beetroot mufflets (a mufflet being a mini muffin)

8oz plain flour

1tsp baking powder

4 small beetroot, cooked and coarsely grated

2oz parmesan, finely grated

2oz mature cheddar, finely grated

200ml milk

about 1/3 tub of plain yoghurt

1 egg, beaten

75ml olive oil

about 3 -4 fresh sage leaves, finely chopped

Line a muffin pan with paper muffin cases.

  1. Mix together flour and baking powder in a big bowl (everything else will be poured in here eventually)
  2. Add beetroot and cheese and mix – try to get rid of the claggy lumps of beetroot
  3. In a separate bowl, mix the oil, milk, yoghurt and egg together. Add the herbs
  4. Pour the wet ingredients into the dry, and mix quickly together. Don’t over-mix, just bring everything together so the pink colour suffuses the whole mixture and it has no lumps of flour. The mixture needs to be quite soft and wet, but not runny
  5. Spoon a large soup spoonful of mixture into each muffin case
  6. Bake for 20 minutes (or until golden) in a medium hot oven (Gas Mark 5)

OK – they are out of the oven now. They are more like mufflets than muffins, slightly on the wee size, and not quite enough oomph in the flavour. So this is what I would do differently next time:

  1. Use baking powder that wasn’t past its best
  2. Use the correct size tin for the muffin cases
  3. Swap the milk and yoghurt for goats milk and yoghurt (thanks cousin!)
  4. Add some salt and pepper
  5. Use more sage or some nutmeg, or possibly orange zest, or dill, that would work
  6. Add some finely chopped scallions
  7. Cut some of the milk by volume, as the mixture was a bit too sloppy

Go on, have a go yourself – they are too easy.

And yes, they would be just delicious with a dollop of creme fraiche and some smoked salmon on top. Thanks Barry Bryson.

Roasted peppers in a jar

A jar of summery goodness

I love roasted peppers in a jar.  Well, they don’t have to be in a jar, they can be in any container you want really, but they can look pretty so why would you hide them in plastic, or one of those lovely brown stoneware pate dishes?  As an aside, I’m very fond of those brown stoneware dishes – they conjure up happy memories of home. At lunchtime there always seemed to be something delicious in a brown stoneware pot: mackerel pate, pork rillettes, roasted peppers in olive oil, etc.

But, it’s glass jars all the way for me these days, apart from anything else, I can seal them up and take them with me on a Monday morning to the flat in Edinburgh, or the office for jazzing up tasty lunches.

Chop everything into a big bowl

Place in a single layer on a baking tray

Roast till peppers are soft and you have caramelised edges

Pop them in a jar

Slow roasted peppers in a jar

3 bell peppers – you can use any colours, but in my experience green peppers often end up looking a wee bit grey, so I prefer to use 2 red and one yellow.

At least 2 big cloves of garlic

2 small onions, or one large

a large sprig of rosemary

a couple of small bay leaves

a red chilli pepper

a glug or so of balsamic vinegar

a tsp honey, if you want it

any other herbs, spices that you fancy – eg thyme, cayenne pepper

a good pouring of olive oil (if you have any at the bottom of a jar of sun dried tomatoes, anchovies, or artichokes, or other such tasty goodies, then use that)

more olive oil – you’ll need enough to cover the peppers once they are in the jar

a grinding or two of black pepper

a mere sprinkle of maldon sea salt

  1. Chop the peppers into large chunks – I like mine about 1.5″ across. Put them in a big bowl.
  2. Cut the onions in half from top to bottom. Lay it on the chopping board on its cut side, and then cut it into wedges. Depending on the size of onion you’ll get 3 – 5 wedges. Add them to the bowl with the peppers.
  3. Place the flat side of a large knife on top of the garlic clove, and then smash it with your fist – this will release the garlic easily from its papery skin and will also give you a nicely smooshy clove.  You still want it pretty much whole(ish) but all squished so you benefit from the release of all that tasty juiciness. Yup, throw these in on top of the peppers and onions too.
  4. Chop the chilli and add as much of it as you want – if you don’t like heat, don’t bother.  I like heat in most foods, but this doesn’t need much, if any, so feel free to omit it.
  5. Strip the rosemary from its stalks and throw the leaves into the bowl.
  6. Add any other herbs and spices you are using.
  7. Now today I had a jar of honey that was solidifying in the jar, so I added a tsp or so of honey into a wee mug and poured a wee bit of boiling water on top and stirred till it was liquid. Then I added a big splish splosh of balsamic vinegar and a good glug or two of olive oil. Mix all this together and add it to the bowl.
  8. Mix all the ingredients together to coat everything in the dressing.
  9. Pour into a single layer onto a baking sheet and sprinkle with a grinding of black pepper and a wee sprinkle of maldon sea salt.  Don’t bother if you only have table salt.
  10. Pop in a medium oven (it was gas mark 3 ish I think).

You’ll probably smell when it’s ready.  Did it take about 45 minutes?  I don’t really know. You don’t want crispy burnt bits, but you do want soft peppers and caramelised brown edges on some of the onions and peppers.

Cool for a bit, then put into a jar. Pour over enough olive oil so the peppers are covered and keep in a fridge for a week or two.  You can eat it immediately if you want, but it’s really nicest after all the flavours have had a chance to infuse in the jar, so I would leave it a couple of hours at least.

In the summer months, you might want to add slices of courgette or aubergine to this. Or beetroot in the autumn. And if you want mushrooms, add mushrooms.

Eat it as a salad accompaniment, or with cold meats, in a sandwich with hummus, or added to a bowl of soup (if you’re doing this don’t do it straight out of the fridge or it will be a bit weird, although I know Nigel Slater would argue for that juxtaposition of hot and cold). Or I’m sure you’ll find other ways of using it to jazz up your meals.

Eat your greens… introducing the greenest soup ever

This morning I had the most delicious breakfast: buttery scrambled eggs and grilled rashers of smoked back bacon from our local butcher.  I really don’t miss my carbs at breakfast time!

My heliboy was out on a mission (fitting a friend’s dishwasher) so I was without a car and kicking around the house.  I could have gone out and put all the garden furniture back where it belonged, after Hurrican Bawbag did its worst on Thursday.  But my wellies were in the car, on the mission.

So, I knitted for a while (Christmas gifts to be made) and then poked around the fridge to see what soup I could make for lunch.  It wasn’t terribly inspiring I have to say, but there was a bag of spinach, and a leek and some onions and potatoes.  It was looking like spinach soup.

Spinach soup

A knob of butter

1 leek

1 onion

1 medium-large potato

1 bag of spinach

chicken stock cube

some grated nutmeg

  1. Finely chop the onion, peel and chop the potato into small chunks, and slice the leek.  I prefer to cut the leek lengthwise and then chop it, so all the slices are half moons.
  2. Melt the butter in a heavy based saucepan, and chuck the chopped veg in on top
  3. Sweat the veg, stirring regularly
  4. Grate in about 1/2 tsp nutmeg, adn throw in the chicken stock cube
  5. Pour in boiling water.  Oh, I don’t know how much, about 3/4 kettle full I think
  6. Stir, then leave to simmer for about 15-20 minutes (and I really don’t care if you leave the lid on or not while it’s simmering)
  7. Check the potato and onion are cooked, then add the whole bag of spinach to the soup
  8. The spinach will quickly wilt down – stir it through and let it simmer for another 3-4 minutes
  9. Zizz it up with a hand held zizzer.  Or do it in a liquidiser if you like washing up
  10. It won’t go completely smooth, but will be completely tasty
  11. Test for seasoning – add freshly ground black pepper and more nutmeg if needed
  12. It would look pretty with a swirl of cream, or a dod of creme fraiche.

This is a subtle, light soup and would make a lovely starter to a big rich meal.  Or even a not so big rich meal.  Enjoy.

Super easy cheesy sesame biscuits

Are we counting down to Christmas yet?  I am.  In my house, that means practising various recipes to make sure they are up to scratch as Christmas gifts.  And today is nibbles testing.

First off were some cheesy sesame biscuits, which aren’t yet in the oven (they’re doing that resting in the fridge thing, so beloved of pastry-type goods). They were ridiculously easy, and have persuaded me of the value of my food processor.  I’ve owned the food processor for bloody years.  It usually lives on a shelf, just out of reach, under the stairs.  I last used it when I attempted one of Jamie Oliver’s 30 minute meals.  He likes to use a lot of gadgets and I knew if I wanted to be in with a chance of having two courses served up within 45 minutes the food processor would be needed. I actually would have needed two, but that’s another story. It was delicious!

But back to the cheesy sesame biscuits.  They are from my new favourite cook book: Ham, Pickles & Jam by Thane Prince.  It’s a glory of a book – full of reminders of (mostly lost) traditional kitchen skills, like preserving with salt (gravad lax and preserved lemons in this section) and drying (oven-dried tomatoes and beef jerky here).  Sadly most of the drying recipes require a dehydrator, so I may take a while before I get to testing that section.

Oh my, now that I’ve brought the recipe out again to type it up, I see I’ve omitted a key ingredient in the biscuits (how can I do this when there are only 5 ingredients?).  Read on and you’ll see.  And you’ll see my adaptation too.

Cheesy Sesame biscuits

  • 4oz SR flour, or use plain flour and 1 tsp baking powder.  Gluten-free is evidently best, so that is what I have used
  • 3oz butter
  • 3oz blue cheese ( I used a distinctly average dolcelatte from tesco’s but would like to try this with some oozingly yummy gorgonzola next time)
  • 3TBsp parmesan, grated
  • 2-3 TBsp sesame seeds
  1. Place all ingredients except the sesame seeds in the bowl of your food processor and whiz, using short bursts of power, till it combines to make a dough (I forgot to add the parmesan, thinking it was going to be part of the sesame coating at the end… ooopsie)
  2. Wrap the dough in clingfilm and chill for an hour
  3. Preheat the oven to 220C / 425F / GM7 and grease or line a baking sheet
  4. Remove the dough from the fridge and roll cherry-sized pieces of dough into balls
  5. Roll the balls in sesame seeds (or for me, the mix of sesame seeds and parmesan) and place on the greased baking sheet.  Make an indentation in the centre of each ball with your thumb, or a teaspoon
  6. Bake for 7-10 minutes until golden brown.  Cool on a wire rack
  7. Perfect with an aperitif!!!  A nice wee sherry I think.

So… I clearly failed that recipe, but I suspect they will be tasty all the same.

Edited February 2018 to add:

Instead of rolling these into individual balls, roll the whole lot of dough into one big sausage (stage 2) and leave in the fridge for a while. When you take it out, slice it up. Pour a whole lot of sesame seeds onto a plate and press each slice into the sesame seeds to cover them. Place them seed side up onto a greased baking sheet and bake for 6-7 mins as above. They looks pretty special done this way (see pic above). 

While the dough has been in the fridge (and I’ve made our Christmas cake, and lunch) I also made some spicy nuts.  Also from Thane Prince, but to be honest I went a bit off-piste with this recipe too, which I think is the whole point of this one.  But, if you want to make your own roasted spicy nuts, here you go:

Roasted spicy nuts

  • 250g nuts (I used a mixture of cashews and blanched almonds)
  • some olive oil
  • 1 tsp raw egg white (not sure this is entirely necessary)
  • 1 TBsp salt flakes – use the best quality salt you can find
  • 1 tsp cumin seeds, roasted and finely ground

Preheat oven to 150C / 300F / GM2

  1. Drizzle some oil on a baking sheet
  2. Place the nuts on a single layer on the baking sheet
  3. Roast in the preheated oven for about 30 minutes, till a pale golden brown
  4. While they are in the oven, use a teeny tiny whisk and try to whisk up the wee bit of egg white, really just to break it down a bit
  5. And use a pestle and mortar to grind the salt and mix with the cumin. I went off-recipe and just threw some cayenne pepper in with the salt once I’d ground it a bit with the pestle and mortar
  6. As soon as the nuts are out of the oven, turn them in the egg white, which is meant to turn them glossy.  I didn’t notice any glossiness, but it doesn’t seem to have done any harm, and I had a spare egg white from the biscuits I made yesterday, so that was ok.
  7. Once you’ve tossed your nuts in the egg white, throw the salt and spice mix over them and toss some more.  The flavours will dry on as the nuts cool
  8. Keep in an airtight container, unless you are eating immediately with drinkies.  More sherry I think!

I suspect that both of these will end up as Christmas gifts. Further copies of the book might too, if books are allowed in our homemade Christmas again this year.

Next weekend I’m baking a ham. Any suggested recipes or just general ideas for what to do gratefully received (and brutally altered to fit whatever I have in the cupboard and what mood I’m in).

OK… I baked the cheesy sesame biscuits and they are just scrumptious! They are light and crumbly, and have a great blue cheesy flavour, with that typical ‘back’ flavour that comes with a strong blue cheese.  Make them!  they are delicious,  and would be even nicer with a wee glass of something to accompany them.  Pictures will follow.

Broccoli and stilton soup

So, when Tesco builds a new store, they do all manner of strange discounts.  We have a new Tesco in the valley and today there were bags and bags of broccoli for only 10p each, all marked ‘TEST’, but all looking like fresh and scrummy broccoli.

They also had enormous whole salmon reduced from £35 to £10. I think they were about 8lb weight. But since G’s sister had already bought a whole salmon earlier in the week and stuffed our freezer full of salmon steaks I resisted that particular temptation.

And grabbed the bags of broccoli.  And a wedge of stilton.  You see where I’m heading don’t you?

Broccoli and stilton soup

1 large onion, finely chopped

1 medium large potato, chopped into small chunks

about 1.5l veg stock

1 large head of broccoli, cut into small-ish chunks

about 100g stilton in chunks

  1. Sweat the onion in a heavy based saucepan with a wee bit of oil or butter.
  2. Add the potato and sweat for a few minutes.
  3. Add the hot stock (or boiling water from the kettle and a stock cube). Cook for about 10 minutes, till the potato is cooked.
  4. Add the broccoli and cook for a further 4 minutes or until the broccoli is cooked.
  5. Add the stilton and smoosh it all up with the electric zizzer.
Perfect for a quick light lunch.  And I’ve heard a rumour that it is good to freeze.

The tomato glut

OK, so it’s a self-inflicted tomato glut, as I bought a whole big box of tomatoes at the farmers’ market yesterday.  Is it a farmer’s market or farmers’ market?  There seemed to be many farmers there yesterday so I’m settling for farmers’ market on this occasion.

Anyway, I was seduced firstly by some very nice bacon from the lovely Sunnyside Farm near Sanquhar (where I hope to butcher a pig later this year) and then some fresh beetroot, which I adore, and eat in vast quantities, making up for the many, many years when I refused to eat it at all, on account of its unacceptable vinegariness.  Who knew it didn’t need to come in a jar full of vinegar?

Then, just when I thought I was safe, I spied the boxes of tomatoes, with a lovely handwritten sign: Tomatoes different sizes and shapes. £3 a box.  How could I resist?

The first recipe also fortuitously made use of my birthday purchase of a large second-hand Le Creuset lasagne-style dish (bought at Garrion Bridge for only £10).  Roasted tomato passata.  Or sauce to you and me.  It’s adapted from a Hugh Fearnley Whatsinstore book.  The preserves one.  Thanks Hugh.  And Pam Corbin who actually does the preserves, and writes the recipes.  So far all the recipes I’ve tried are lush, so go buy the book, and get the original recipe, along with all her good advice on sterilising jars and all that jazz.

Roasted tomato sauce

about 1kg tomatoes

2-3 shallots, peeled and sliced thinly

2-3 garlic cloves, also peeled and sliced thinly

A few sprigs of a mediterranean herb like rosemary, thyme, basil or oregano, alternatively add a teaspoon of crushed fennel seeds.  Add some sliced fresh chillies if you want a kick, or dried chillies if you haven’t grown/bought any fresh ones!

1/2 tsp salt

a good few grinds of black pepper

1/2 tsp sugar

a serious glug or two of olive oil

Preheat your oven to GM 4, or 180C

  1. Cut your tomatoes in half, and place them cut side up in the dish.  You may end up with a couple of layers, but that’s ok.
  2. Scatter all the other ingredients over the top
  3. Roast for about an hour or so, about until your nose is telling you that there is something seriously delicious in the oven
  4. Use a large spoon to muddle the tomatoes around a bit in the pan, allowing the juicy tomatoes to dissolve some of the lovely caramelised burnty bits in the corners. Or don’t if you’d prefer not to have the richer colour and flavour in your final sauce
  5. Cool for a wee bit and then liquidise.  I put it in a bowl and use the hand-held zizzer, but you could use a proper liquidiser.  Or Pam recommends sieving it, or putting it through a mouli or a passata machine.  Who owns a passata machine?  Hands up.  Get over yourself.  Just zizz it with a zizzer and call it rustic tomato sauce.
  6. Now, I don’t bother with the whole jar thing at this stage, which seems to add a layer of complication I can’t be bothered with when I only have a weekend to play with.  (You have to put it in sterilised jars and sort of seal them, and then put them in a large saucepan of water and simmer the whole lot for a while).
  7. Pop in a labelled freezer bag, and pop the freezer bag in a suitable plastic container. Put it all in the freezer once it’s cooled enough not to defrost your freezer.

And that’s it.

I used the first batch straight away with homemade meatballs and it was absolutely delicious.

My second recipe was Tomato and Fennel Relish, but you’ll have to wait for that because I’m back in Edinburgh now and the recipe book is in the Valley.

 

Sweet chilli dipping sauce

I love chillies.  I love their heat.  And I love thai sweet chilli dipping sauce.

And then I found a recipe to make sweet chilli dipping sauce.  Thanks Thane Prince, from your Jellies, James and Chutneys book.  Lots of lovely things in there, but this is the one I kept coming back to, and thinking I had to make it.

Edited to say the title of the book would of course be Jellies, Jams and Chutneys.  Not James.  

So, last weekend, or was it the one before, I bought my chillies (my ones in the greenhouse aren’t ready yet) and made my first batch.

It’s another great quick recipe, and one that I think I will come back to again and again, although next time I’ll remember to put on a pair of latex gloves before chopping up 60z of hot chillies.

Sweet chilli dipping sauce

2 cups rice vinegar

15oz unrefined caster sugar

6oz red chillies, stemmed and finely chopped with the pith and the seeds

1 TBsp maldon salt

  1. Put the vinegar and the sugar in a large deep saucepan and slowly bring to the boil, stirring until the sugar has dissolved.
  2. Increase the heat, and boil rapidly for 5-8 minutes until the mixture becomes syrupy.
  3. Add the chiles and salt and cook for another 3-4 minutes. Watch carefully as the mixture can bubble up when the chiles are in there.
  4. Pour into hot sterilised jars, cover with vinegar proof seals and label.
The version I made is extremely hot and is perhaps nicest when added to other things like cream cheese or mayonnaise to make a dip.  Or a stir fry to pep it up a bit.
I keep it in the fridge, but it would probably be fine in a cupboard. It evidently keeps for 6 months.  Not in my kitchen it won’t, maybe 6 weeks.

Parmesan and courgette herby muffins

I had to see the doctor yesterday morning.  At 10.30am.  But Id had to get up at 8am to phone the doctor, well to press the redial button many many many times before getting through to a receptionist who quite bluntly told me there were ‘no appointments today’.

I was ready for this.  My friend Jane had informed me that the way to see a doctor when faced with this sort of obstacle is to say, calmly, “It’s really important that I see a doctor today.”

Anyway, to cut a long story short, I eventually got an appointment for 10.30am.  Which gave me 2 hours to finish getting ready, bring my washing in from the line, have a quick tidy up and clean the bathroom, and make muffins.  Because of course that’s what everyone does when faced with some unexpected extra time at home.

Parmesan and courgette herby muffins

  4. Pour the wet ingredients into the dry, and mix quickly together. Don’t over-mix, just bring everything together so it has no lumps of flour. The mixture needs to be quite soft and wet, but not runny
  5. Spoon a large soup spoonful of mixture into each muffin case
  6. Bake for 20 minutes (or until golden) in a medium hot oven (Gas Mark 5)

The muffins were cooled for a wee while on a cooling rack, and then bundled up in a clean tea towel, tied with a piece of string and taken to work to share with my colleagues. The verdict seemed positive!

Cheese scones

I’m moving flat soon.  And as a result I’m staying in a lot, with the intention of clutterbusting.  The other evening the most sensible thing to do seemed to be to clutter bust a kitchen cupboard by using ingredients to bake something, and then get my colleagues to eat it.

So, cheese scones were the chosen baked goods (I have a colleague who can’t eat sugar, so has missed out on many treats in recent months; and I owed him big time for a missed deadline).

Cheese scones are so easy to make.  In fact all scones are so easy to make.  I should make them more often. These scones were made with a chillie cheddar, so had added spiciness, which is always good.  They were delicious straight out of the oven spread with butter, or the next day heated for 30s in the microwave to re-heat and then spread with butter. Yum.

Spicy cheese scones

140g SR flour

140g wholemeal flour (or plain)

1tsp baking powder

50g butter, straight from the fridge, cut into wee pieces

85g strong cheddar, grated

1 egg

2TBsp natural yoghurt

4 TBsp milk

Heat oven to 190C (fan) or Gas 5.

  1. Mix the flour, baking powder and a pinch of salt in alarge mixing bowl.
  2. Cut in the butter, in wee chunks, and rub in with your fingertips till it resembles breadcrumbs. You could probably use a food processor, or one of those clever pastry maker things, the shape of a horse’s stirrup.
  3. Add any herbs or spices at this stage – sage might be nice; or cayenne, or dried chilli if you like it hot or nigella seeds are quite scrummy.
  4. Stir in about 1/2 of the cheese and then make a well in the centre.
  5. Whisk the remaining ingredients together and pour into the well.
  6. Use a knife to bring all the mixture together to make a soft, but not sticky, dough. Add more milk if the dough is too dry.
  7. Turn onto a floured surface, and either press or roll out to about 2cm thick. Do not overwork, or it will get very tough.
  8. Cut with a knife, or use a cutter. Re-roll the trimmings to use all the dough.
  9. Place on a non-stick baking sheet, and sprinkle each scone with more cheese.
  10. Bake for 10 – 12 minutes until golden
  11. Cool on a wire rack. Or eat immediately.  With butter
